More than 65 fish varieties pass through his kitchen, some modest, other forgotten, all magnified and carrying their intense flavours.
Known for his love of good produce, the chef showcases the region's best: brousse du rove goat's cheese, bottarga, beautiful sundrenched tomatoes, eggplants and many other wonders of nature, all delivered by select local producers with whom he shares the same vision.
